Cheesecake Ice Cream Fruit Cake

Raw Vegan

Who says you need baking skills to make this scrumptious fusion of chocolate cake? Who says you even need to bake it? For all my raw vegans, this one's for you! Yes, I said it, this cake is RAW (uncooked; never heated), dairy, gluten, and soy free.

I know what you're probably thinking, "Oh, please just get to the point Rue! How can I make this?". Let's cut to the chase.

The only materials you need for this recipe are:

1 Round pan

1 Blender (preferably Nutri Ninja to use both of it's cups; Small and large)

1 Measuring cup

1 set of measuring spoons

1 wooden spoon

1 sheet of baking paper (optional)

Ingredients:

This is a picture showing SOME of the main ingredients I used. Some of you may wonder which brand of butters I used, what vanilla bean looks like, and which cacao powder I used. All were purchased at Whole Foods, but may be for sale in other health food store.

Base

  • 1/2 cups of raw almonds

  • 3-4 dates

Cheesecake Layer

  • 1 cup of raw cashews

  • 1/2 cup coconut butter, softened

  • 1/4 cacao butter (or spread), melted

  • 1 3/4 cups of maple syrup

  • 2 TBSP cacao powder

  • 1/2 cup water

Ice Cream Layer

  • handful pitted and halved fruits of choice ( I chose banana and strawberry)

  • 1 frozen banana, cut into cubes

  • 1/2 vanilla bean

  • pinch cinnamon

  • 1/4 cup nut milk ( I used almond milk)

Toppings

  • frozen fruits of your choice, extra chunks of ice cream, and melted cocoa spread

Instructions
  1. Add almonds and dates to a small blender and process until sticky. Press the mix in a mini cake pan lined with baking paper on the bottom.

  2. Add the ingredients for the chocolate cheesecake to the same small blender and blend until super smooth and creamy. Scoop on top of the base.

  3. Spread the pitted, halved fruits on top of the cheesecake in a single layer.

  4. Rinse the blender and add ingredients for the ice cream in the same small blender. Continue until it resembles soft serve ice cream.

  5. Quickly scoop ice cream on top of the cherries, place the whole cherries on top and pop it in the freezer. Best overnight.

  6. To serve, allow the cake to sit on the counter for 3-4 minutes before getting it out of the pan and slicing it. Serve with few extra frozen organic berries and drizzle melted raw chocolate generously.

Tastes great, right? Who would of thought this cake was made with all natural and healthy ingredients? Every ingredient consists of their own nutritional facts; Iron, protein, vitamin D, good fats/carbs, and fiber. What's even better is that all the nutrients are active, since the cake was never cooked or heated. Try this at home and tell me how it went.
