Eat Better Feel Better

"I really regret eating healthy today"- said NO ONE EVER!

Many people belive I only eat plants and grass; Yes, plants and grass! "How rude!"- Stepanie from Full House. Well, ladies and gents, I do. No, not litetally, but you can say live a plant-based lifestyle. You'd be surprised at the amount of delicious foods, made with plant-based ingredients.

I was at Whole Foods, the other day, doing my weekly grocery shopping. As I went towards the freezer, to grab my spealt bread, I came across a pack of Coconut Paleo Wraps (a great substitute to starch-based wraps). My first reaction was, "Ehh, this probably has a lot of toxic ingredients". I grabbed it anyway and read the ingredients. I was thrilled and shocked to find out that there is only one ingredient, coconut! Coconut meat, coconut water, unrefined virgin coconut oil. That's it! Not to mention it contains 4.5 grams of saturated fat, per wrap. This is great news to me, becasue I'm working on helping my 5 year old gain weight.

I bought a pack to taste it, and decided to come up with a recipe. Here's the outcome:

COCONUT VEGGIE QUINOA WRAP

RECIPE: (for 2 people)

1.) Cook the quinoa

-2 cups of water

-Wait for water to boil

-1 cup of quinoa (keep on HI temp then lower to mid, once the quinoa is dry)

2.) Stir-fry your veggies (Do not use oil when stir-frying. Cooking oil kills it's nutrients and turns the good fat into unhealthy fat)

-Asparagus (1/4 cup of water to cook)

-Once dried, add red onion and green onions

-Add 2 table spoons of Coconut Secret Coconut Aminos Teriyaki Sauce (optional)

3.) Toss veggies into quinoa and mix it all together. (I prefer adding pink salt and dulse flakes as a seasoning)

4.) Make you wrap

- Lay wrap on a dry surface

-Slice a quarter (or half) of a haas avocado and smash/smooth it out all over the wrap, like a butter.

- Add your quinoa (about 4-5 tablespoons or as desired)

-Roll your wrap like burrito. Don't worry, as moist and thin as it feels, this wrap is pretty stirn; It does not rip easily.

- Slice in half (optional

5.) EAT UP! Bon Appétit.

It's delicious! It has that mild, sweet, coconuty taste, and the quonia/veggies give it that salty and grainy taste. That same brans also has a tumeric brand, if you enjoy the citrusy taste of tumeric.
